Legumes and their importance in nutrition

The master's thesis deals with the characteristics of legumes, their consumption in my country and in the world, different options of preparation and mostly their composition and influence on health. Legumes are an important source of plant based protein, complex carbohydrates, fiber, vitamins, minerals and other components, that might be regarded as less desirable due to possible interactions with food nutrients and gastrointestinal issues. The amount of some of these substances could be reduced by following treatment and on the other hand even these antinutrients can be benefitial. Last but not least legumes are grtting more important in conection with the environment and other alternative diets such as vegetarianism and veganism, where legumes are important as a protein source instead of animal based sources. The practical part consists of a survey with the aim to determine knowledge about legumes, preference and frequency of their consumption and with linking characteristics of students of medical faculties as a part of the population, that is preparing for work conected with human health. The presented diploma thesis presents an evaluation of the results of the influence of selected legumes on soil microbial activity. The literature review includes a description of legumes in sowing procedures, a description of the spectrum and representatives of the soil microbial community, the main features of soil microbial activity and methods of measuring this activity. The conclusions were preceded by a small-plot experiment on a plot of land managed in an organic farming regime, from which soil basal respiration, as the main parameter of soil microbial activity, was investigated in the laboratory with mixed samples, and further quantification of the total number of microorganisms by the cultivation method.
Analysis of the intake of selected nutrients in school canteens

The topic of the diploma thesis is the analysis of the intake of selected nutrients in school canteens. The aim of the diploma thesis is to find out whether school canteens meet the standard of the consumer basket and nutritional standards for school meals in the legume commodity. The work is divided into two main parts. The theoretical part is divided into 5 main chapters. The first chapter deals with nutrition, the second chapter focuses on nutrients, the third chapter refers to basic nutrients, the fourth chapter is devoted to differentiated diets and the last chapter is about eating in school facilities. The practical part contains the results of filling the consumer basket in the commodity of legumes at schools in the South Bohemian Region, which then compares the results with the recommendations of the Decree on School Catering 272/2021.
Analysis of the normative selected commodities of the consumer basket in the school catering systems for primary school pupils and a proposal for the possibility of improving the limit indicators

The topic of this diploma thesis is called Analysis of the fulfillment of the norm of selected commodities of the consumer basket in the school catering system for primary school pupils and a proposal for the possibility of improving the limit indicators. The task of this diploma thesis is to find out whether school canteens can successfully meet the standard of the consumer basket and nutritional standards for school meals in the commodity of legumes and which legumes the school canteen use the most. The work is divided into two parts. The theoretical part describes topics related to the school catering system from history to the present, as well as school catering legislation. The chapter consumer basket acquaints us with nutritional standards for school meals, financial limits for the purchase of food, fulfillment of the consumer basket with nutritional recommendations and with methods for compiling a consumer basket. The last chapter of the theoretical part deals with nutrition, healthy nutrition and its principles, the pyramid of nutrition for children and the drinking regime. The practical part evaluates the results, filling the consumer basket in the commodity of legumes according to the standard on school meals. The results of the average fiber content in legumes in one lunch, which were obtained from data in the consumer basket, are also evaluated here. The results evaluate the actual and average daily consumption of legumes. In the last chapter we follow which legumes the school canteen uses the most for the preparation of meals, we obtained these data from the dispensers provided by the canteens.

Didactic Methods used in Botany Teaching at Elementary Schools Diploma thesis concerns the topic of utilizing didactic methods in the education of botanic at the grammar schools. The thesis is divided into three parts. In the first part, there are described chosen didactic methods and current classification of botanic in the "General education programme of the basic education system". Furthermore, there is described past classification of the botanic in the "Education programme of Grammar school, General school and National school". Second part contains questionnaire results - pupils and teachers of botanic in the 7. grade of grammar school. The goal of the questionnaire was to find out, which teaching methods are used during the education of botanic, which methods are popular and unpopular with teachers as well as students and which methods are, according to the opinions of the teachers, effective and ineffective. Other goal of the questionnaire was to find out, if the teachers are using education programmes during lessons. In the third part of the thesis, there is listed my own proposal of a lesson of a chosen topic in botanic, which I have based on the results of the questionnaires. Current use of grain and oil crops for feeding of farm animals

Cereals are an important source of nitrogenous substances and energy in the form of starch. They also contain, to a lesser extent, antinutritional substances such as alkyl resorcinols, non-starch carbohydrates, phytic acid and others. For the feeding of farm animals, they are processed and treated mainly by extrusion, pressing, drying and the like. Legumes are a source of crude protein. They are widely used, both for hard, mature seeds and for harvesting green matter. They can often fully replace oilseeds in compound feed and are an essential component of compound feed. Oilseeds are a valuable component of compound feed. They are mainly characterized by high fat content. Waste from the industrial processing of oil seeds produces pressed pieces or extracted scrap, which are widely used as components of feed mixtures. These components have, in addition to high fat content, high protein content.
Evaluation of functional properties of selected vegetable flours

This bachelor thesis deals with basic structure, nutritional properties, production and use of flours. There are information about cereals and legumes, which are used for productions of flours. This thesis talks about food intolerances, which can be a reason why change basic flours of wheat, barley, oat and rye to another. Practical part is about 14 flours, which were tested on dry matter, humidity, nitrogen substances content, proteins, protein electrophoretic profiles (patterns), solubility, water and fat holding capacity, formation of gels and changes of colours during a boiling. The results of this research are information about nutrition and functional properties of tested flours.
The nutritional importance of legumes in human diet

This Bachelor's thesis is focused on the nutritional importance of different kinds of legumes, their favorable and unfavorable nutritional properties and their effects on the human organism. Legumes (or pulses) are a very valuable food because of the content of many nutritionally important substances and are clearly a part of healthy diet. They are the most important plant source of protein and fiber and are classified as foods with a low glycemic index. Consumption of legumes is not too high among ordinary population. Doubts about legumes can be caused by the content of so-called antinutrients, which, for example, reduce the use of nutrients and may cause digestive problems. However, these substances can be eliminated by appropriate treatment. In addition, they are biologically active substances that also exhibit positive effects on human health, especially antioxidant and anti-carcinogenic, and thus can play a role in the prevention of both tumor and metabolic diseases. Nowadays they are still the subject of research. The practical part of this thesis includes a field survey of the offer of legumes and products with their contents in stores. Is the role of myrmecochory in primary succession on industrial deposits in landscape determined by trophic ant relationships: nectaries/aphids/plant seeds? (a case of legume plants)

The role of ants in primary vegetation succession is well-known. Ants bring into extreme habitat organic compounds and dispers seeds. However, there is a gap in the knowledge which factors influnce motivation of ants to disperse seeds. One of may hypotheses could be the existence of relationship between myrmecochory and trophic interaction of ants with EFN or aphids. Goal of the bachelor theses is to describe some factors, which could be important for research of relationship between myrmecochory and trophic interaction.
